Marble Hoon Kuih

Ingredients
Mixture A
- Star Brand Green Bean Starch50g
- Pandan Leave5 pieces
- Water600ml
- Caster Sugar75g
 
Mixture B
- Star Brand Green Bean Starch25g
- Water150ml
- Coconut Milk (thick)150ml
- Salt¾ tsp

Cooking Method
Mixture A
  1. Blend pandan leaves with 200ml water. Strain with extra fine sieve. Add water to make 600ml pandan juice.
  2. Add green bean starch and caster sugar into the pandan juice. Stir well.
Mixture B
  1. Add green bean starch into water. Add coconut milk (thick) and salt. Stir well.

Cook the mixtures A and B in two separate pots over low heat. Stir the mixture until boiled and thicken.

To Create ‘Marble’ Effect:
  1. Prepare an 8 inch mould.
  2. Pour ½ of mixture A into the mould to form the first layer. Pour entire mixture B as second layer. Pour the balance of mixture A as top layer.
  3. Swirl the mixture using a knife to get a marble effect. Refrigerate before serving.
